Ukrainian Vareniks (Steamed dumplings with berries recipe)

Have you ever tried Ukrainian vareniki? You might know them as dumplings or pirogi. They are not difficult to make but requires some time. Anyway, the result is delicious. 

My grandma was making the best steamed dumplings with berries so I'd like to share her recipe with you. 
-Vareniks in Steamed : The dough:












2 eggs
1/2 cup sugar
1 cup buttermilk
pinch of salt
1 teaspoon soda dissolved in a splash of vinegar
all purpose flour (as needed to make a soft and tender dough ball)

Filling:
Berries of your choice (sour cherries, black currant, strawberries or blueberries)
Sugar (as needed)

You will also need a tall pot, enamel bowl and cheese cloth.

Make the dough: mix eggs, sugar, salt and buttermilk. Add the soda dissolved in vinegar, quickly mix this all together and pour it into the flour. Knead until medium soft and easy to roll. Add flour as needed.

Roll the dough out about 5mm to 1cm thick. With medium size glass cut out circles out of the dough. Sprinkle every circle with a bit of sugar and add your berry filling on one side. Fold the dough over so the filling is in the center of a half circle. Pinch edges to contain filling and continue doing this until you use all of your dough. Place the ready dumplings on a wooden board dusted with the flour.

Now you will be steaming your dumplings the authentic way. Fill your pot with water, about 1/3rd of it's volume. Let it boil and reduce heat slightly. Keep the water boiling on the lover temperature during the entire cooking. Cover your pot with cheese cloth and tie the knot on the side to create a flat surface for cooking. Be careful with using open flame that you don't catch the cheese cloth on fire.

Place several dumplings on the cheese cloth, cover them with enamel bowl and let it steam for exactly 6 minutes. Remove the first portion, transfer them into serving plate and continue the same process with the rest of dumplings. Work quickly since you don't want to overcook them.

Believe me, your berries dumplings will turn out delicious, as we cook it here in Ukraine.
